It has been a loooooong time since I’ve blogged. Not because I don’t care to write anymore; I’ve just been trying to keep up with my life. Once the holidays hit, I think I was stuck in a storm like Dorothy and Toto. I mean, where did the time go? All of a sudden I landed in 2014 and YIKES it’s February already…somebody take me to the Wiz!!
I hate doing new year resolutions because it’s usually a short list of stuff that takes a miracle to accomplish and it hardly ever happens – I mean, what’s the point right? So, instead of resolutions, I decided to make a list of things I’d like to accomplish this year. Short term goals, extremely doable stuff, and things that’ll make my life a whole lot better. The first thing on my list? Start back meal planning.
I used to meal plan all the time before 2013 hit. Actually, I’m not even sure how I got away from it. I’m thinking the constant writing/blogging/blah blah blah made me write less for myself and more for…well you I guess. 🙂
So 2014 is back to me. I really need to get my life together before things get out of control. As a mom and a wife, lack of control is a pretty easy achievement LOL!
Second on my list is trying a new recipe at least once a week. If I counted all the recipes I’ve saved in my favorites (Google Chrome and Internet Explorer) and added those to all the recipe clippings, written notes and folded cookbook pages, and cooked one recipe per day, I’d have enough food to last a couple of years – SERIOUSLY! And as much of a fickle foodie I am, I really need to cook with more variety. I get so bored with food on a daily basis that although I’m cooking every other day for the family, I go out for lunch at work to avoid leftovers. I
despise loathe HATE leftovers!!
I digress. 🙂 Here’s my plan. I will post my meal plan for a 2-week stretch every other week. This will include some new recipes and some recipes on my list to try. I will include the recipe links as well. The meals will usually coincide with what’s on sale at the grocery store and in season (because I’m a bargain shopper like that – with 6 kids, I have to be). I would be absolutely delighted if you join me and weigh in here on what you thought of the recipes. When something is really good and/or I have figured out how to make it better, I will blog the recipe for you.

Super Bowl Sunday (this was all hubby’s request):
Spicy Fried Chicken Strips – Do you remember the super old recipe for KFC spicy chicken? The one where you’d bite into the chicken and could see the red, hot sauciness baked into the skin? Yeah…that one! These taste just like it. Sooo dern yummy! And what’s best is my hubby who can barely stand the spice of regular black pepper absolutely looove this! I love spicy foods so it’s a win/win! Plus, Pete’s Fresh Market has chicken breast on sale for $1.79/lb -that’s the cheapest I’ve seen!
Quick Queso Dip – A little cheese, salsa, ground meat. Easy as pie! Well, pie isn’t really that easy but you know what I’m trying to say.

Mini Chicken Pot Pies – Perfect for little hands with big appetites and just right for winter since it doesn’t seem to want to end.
Sausage and Black Bean Chili with Buttermilk Cornbread – An oldie, but goody. Quick and easy for a weekday meal.
Chicken Parmesan Roll-ups – I figure it will be perfect to make a bunch of these then freeze them for later use. You never know when I won’t feel like cooking, It could sneak up at any minute LOL!
Roasted Vegetables – Pete’s Fresh Market is having a heck of a sale on broccoli – only $.49/lb!! So, I’m roasting them with garlic, onion, portabello mushrooms, carrots and sweet potatoes – all of which are staples I keep at home.
Baked Spasagna – You can never go wrong with a good pasta and meat sauce recipe – especially one you can bake. Plus, this looks perfect for freezer cooking!
French Toast Rolls – I-have-no-words-for-this-yumminess! My God (okay two words)!!! 🙂
