Melt-In-Your-Mouth Nutella Butter Cookies

It has been a looooong while since I have blogged.  Almost 2 years, in fact.  Yikes!  All year, I had planned my blog comeback.  I was going to tell you how I had filed for divorce, how my children had taken the aftermath of the separation, how caring for my elderly parents has made my fingernails split, how I managed to keep my sanity and a full-time job through it all and cook some really fabulous food in spite of.

But I am not telling you any of that today.  No!  Today, I will not sing you my sad song.  Today, you will not learn of my triumph after war.  Today is exactly 2 weeks until Christmas – that’s only 14 days – and we MUST talk Christmas cookies!  What could be more important?

I’m just gonna go ahead and tell ya I was so not ready for this post.  About a month or so ago, my friend Natasha over at House Full of Nicholes requested volunteers for her 25 days of Cookies Blog Hop.  I always bake Christmas cookies so this seemed fun, easy and a good way to get back into the swing of writing.

Now fast forward about two weeks.  Two weeks is still plenty of time to blog a recipe, right?  Right!  Well, my oldest daughter in the home, Hannah, has the audacity to turn 16 on the 19th.  In just a mere two busy, rushed, I-don’t-feel-like-doing-anything-after-work-or-on-weekends weeks, her sweet 16 party went from an at-home/basement party to a “Quick! Let me book a rental because why in the heck did I think I could have this in my dungeon of a basement, anyway” party!

So I booked the venue and, of course, being the last-minute momma that I am, the date I wanted (which was dangerously close to Christmas) was taken.  In fact, the date before that was taken and the weekend before that was taken and the day before the weekend before that was taken and all they had left was a Friday evening of the following week.  Did they say next week?  Good lawwwwwd!  I wonder if I can get away with throwing her sweet 16 somewhere around 16 1/2!

Just that fast, I’m party planning, mall shopping (with the teen of course), outfit buying, price comparing, invite printing, DJ booking…the works!!!  Cookies?  Did I say I always do Christmas cookies?  Tuh!

I don’t like not doing what I said I would do.  I mean, I may be a little bit late doing it…and hopefully I can get some grace and understanding for my tardiness (deduct a point or two and let me get on with my education please), but I am most certainly going to do what I said I would!  Well…if you ask my 4 or 8-year olds, they may beg to differ but then again their life is so good and carefree they can’t remember what day it is most of the time.  How they remember every unkept mommy promise, I’ll never know (ahem…this is in no way admission of guilt).

I digress!  From the very beginning, I knew I would do a Nutella butter cookie.  Why?  Because this recipe I made by mistake last Christmas turned out to be the softest, most buttery, most Nutella-y cookie I’ve ever made and it’s super duper easy and fast – only 4 ingredients!

So without further adieu (because I just made these cookies at nearly midnight and I’m sleepy as heck after running around searching for teal, orange and silver colored party favors all day in a snowstorm with worn tires), here is the recipe that will make Santa give you a french kiss and a new kitchen gadget!

Melt-In-Your-Mouth Nutella Butter Cookies

This is what happens when they smell so dern good that you can’t wait the entire cool down time and you attempt to move them and they break apart.  Yeah…don’t do that!


Melt-In-Your-Mouth Nutella Butter Cookies

Yield: About 30 cookies


  • 2 sticks butter, softened
  • 1 cup Nutella
  • 2 cups flour
  • 1 egg
  • Sprinkles (optional)


  1. Preheat oven at 350 degrees.
  2. In a mixing bowl (electric or hand), whip butter and nutella until well blended.
  3. Add egg and whip.
  4. Add flour and whip again until well blended.
  5. On a baking sheet, use a cookie scooper to scoop cookie dough on to cookie sheet. Space at least two inches apart.
  6. Sprinkle cookies (if so desired).
  7. Bake in oven about 8-10 minutes.
  8. Let cool (VERY important here) about 20 minutes.
  9. Enjoy!
